this dish is so crunchy and satisfying.
ingredients, for two:
1 package kelp noodles, soaked for 10 minutes and rinsed
2 carrots, sliced thin
1/2 small purple cabbage, chopped or sliced
4 crimini or white mushrooms, sliced
peanuts, lime wedges, cilantro
raw pad thai sauce:
1/4 raw peanut or almond butter
1/4 small to medium white onion
3 Tbs tamari
1-2 Tbs maple syrup
2 tsp chickpea miso
juice of 1 lime
chili flakes or cayenne to taste
blend all sauce ingredients together until smooth.
combine noodles, veggies and sauce in a bowl and mix until fully coated.
sprinkle with peanuts and cilantro and serve with extra lime wedges.
enjoy immediately for crunchier noodles as they will soften as they absorb the sauce.
