miso noodle salad bowl

so many amazing flavors in one bowl. this salad will fill you up minus the food coma.

ingredients, for one:
~3 cups baby spinach or mixed greens
1 serving cooked soba noodles
1/2 avocado, chopped
2 shiitake mushrooms, sliced and steamed for 3-5 min
1 baby bok choy, chopped and steamed for 3-5 min
1 serving baked tofu, chopped
​rice wine vinegar + sesame oil
sesame seeds + nori

japanese sweet potato salad:
1/2 japanese sweet potato, chopped, steamed and cooled
1 Tbs plant-based mayo
1 tsp chickpea miso
1 tsp rice wine vinegar

toss spinach with a splash of rice vinegar and sesame oil in a large salad bowl
mix ingredients for sweet potato salad dressing and fully coat steamed potatoes
arrange all ingredients on top of spinach and sprinkle with sesame seeds and strips of nori
